Is this what they mean by ugly delicious?

Recently, Centr member Mia laid down a challenge to our kitchen wizards via our community. Could we make her beloved French Canadian addiction, poutine – a dish of fries, gravy and cheese curds that Mia describes as "probably the worst in the world in terms of healthy living" – healthy?

Consider this Friday Reveal Dan Churchill's way of saying "Challenge accepted!"

Dan Churchill’s Healthy Poutine

Prep time: 15 mins
Cook time: 30 mins
Serves: 6 - 8

Ingredients

  • 2 large sweet potatoes (skin on, cut into quarters, then each quarter cut lengthways into strips)
  • 2 tbs extra virgin olive oil
  • Salt & pepper
  • 1 cup cashews (soaked in water overnight or minimum 4 hours)
  • 1 cup vegetable stock
  • ¼ tsp ground cumin
  • ¼ tsp ground turmeric
  • ½ cup coconut milk
  • 1lb ground turkey
  • ½ cup goat's cheese, crumbled

Method:

  1. Preheat oven to 180°C/fan 160°C/gas 4 and line a baking sheet with baking paper.
  2. Toss the sweet potatoes with half the oil, then season with salt and pepper. Place sweet potatoes on the sheet and bake for 20 - 25 minutes until the flesh is soft, but still holding its shape.
  3. Meanwhile, for the gravy - in a blender place cashews and soaking liquid, vegetable stock, cumin, turmeric and coconut milk then blitz until smooth.
  4. Heat the rest of the olive oil in a skillet over medium heat, then add ground turkey. Break it up with the spoon and cook for 5 - 10 minutes until golden and crispy.
  5. Take the skillet off the heat and stir the gravy through the turkey.
  6. To assemble, transfer the sweet potatoes to a serving dish then crumble over half the goats cheese. Pour over the turkey and gravy mix, and top with the rest of the goats cheese.
